I was craving something sweet and decided to make one of my favorite desserts using Ritz crackers as a crust and plain yogurt topping which is oozed on during the last five minutes of baking! Everyone loves this cake! I start with 4 80z blocks of cream cheese, 4 eggs and 8ackets of Splenda (or 1/4 cup sugar) to blend. Then, crush 3cups of Ritz crackers with 3 tablespoons of butter and 1/4 cup sugar and press into a 9″ x 13″ pan before spreading cheesecake filling over top. Then bake at 350 for about 45 to 50min. Take cake out of the oven, set aside. Meanwhile, whip 2 cups of plain Mountain High yogurt with 2 tablespoons of sugar then spread over the top of the cheesecake and return to oven for an additional 5 min.
